Tumeric and Lemon cake

Tumeric is a wonderful spice, not only has it got some health benefits, but makes food a delicious golden color.

We had already done green (spinach) muffins, so this time we wanted yellow! Thankfully crazy cakes are very adaptable and easy for toddlers to make. This was the yummy result.

Ingredients

  • 1½ cups flour
  • 1 tsp powdered tumeric
  • 1 tsp baking soda
  • 1 tsp salt
  • Zest from one lemon
  • ¾ cup raw sugar
  • 1 Tbsp honey
  • ½ cup oil
  • ¾ cup lemon water (juice from one lemon plus water to make required amount)
  • 2 Tbsp vinegar

 

Instructions

Preheat oven to 190 degrees C and oil cake tin.

Sift the first four ingredients together in a bowl. Dissolve the sugar and honey in the water and add vinegar. Measure the oil and add it to the dry ingredients, without stirring. Add the water and vinegar mixture to the flour-oil mixture. Stir until the mixture is smooth and no dry lumps remain.

Pour the mixture into cake tin and bake for 30 – 40 minutes, or until a skewer comes out clean.

Leave cake in the pan for five minutes, then turn out onto a wire rack and leave to cool.

She loves baking and loved making it yellow! Next challenge is red.

 

NB. I use gluten free flour(s) and this still works great.
