Out of the blue came the request for chocolate cookies and there was no way I was going to say no… mmm chocolate. These are very chocolatey meaning you can reduce the sugar by a lot and still enjoy them. Can also add peanuts if you like that combination.
1/4 cup coconut oil
2 tbsp olive oil
1/2 cup sugar (could prob do 1/3)
3 tbsp water
1/4 tsp salt
1/2 tsp baking soda
1 cup flour (I did 1/2 cup wholegrain rye flour and 1/2 cup gluten-free mix)
1/3 cup cocoa
handful peanuts optional
Cream oils and sugar till fluffy. Mix in water. Add dry ingredients one by one and mix well. Add peanuts at end if you are adding them.
Refigerate for 30 minutes. Preheat oven to 200 C.
Form dough into 2cm balls and place on greased oven tray. Flatten very slightly. Bake for 10 minutes.
Nb. These freeze well.
