Stovetop Popcorn

I had never made popcorn in my life, but it is an occasional snack that DD loves and difficult to find popcorn that doesn’t contain milk products or salt/sugar overload. All the popcorn making packets I can buy are also designed for microwave use – which we don’t have.
How hard can it be? My first stove-top attempts resulted in burnt and half-popped popcorn…. Then I found this trick.

Ingredients

Popping corn

Coconut oil

Instructions

Heat 2 tablespoons of coconut oil (more or less depending on pan size and popcorn amount) in a pot on high. When starting to get hot add three corn kernels. When these pop remove from heat. Add popping corn give a shake so spread evenly and in one layer on bottom of pot. Put on lid. Count to sixty. Put back on heat and wait till starts popping. Can slightly open lid to let steam out at this point, but not necessary. Give an occassional little shake. When popping slows down to every 1 or 2 seconds remove from heat and put popped corn in a bowl.

Top with favorite topping or eat as is.
