Coffee and Honey Cake

After seeing photos of coffee cake posted all over my facebook feed I was desperate to eat some too. So adapted a depression/crazy cake and loved it (and I wasn´t the only one)

NB. I don´t like foods very sweet and this year eat almost no sugar, sweetened foods and relatively low carb (obviously yesterday was the exception) so feel free to add more sugar for taste. The recipe I adapted from used 3/4 cup sugar.


2 cups flour ( I used 1 1/2 cup gluten-free flour cake mix, 1/4 cup teff, and 1/4 garbanzo flour)

1/3 cup sugar

2 tsp baking soda

1/2 tsp salt

1/3 cup extra virgin olive oil

1 tbsp balsamic vinegar

2 tbsp honey

1 cup black coffee (strength depends on how strong you like your coffee and coffee cake. I used espresso strength)

1/4 cup water


Preheat oven to 180 degrees.

Sift dry ingredients into a bowl. Mix well. Make a well in the centre and add wet ingredients. Mix well with an egg whisk.

Pour into greased 20cm round cake tin (mine is 23cm and worked fine).

Bake for 40 minutes, or till skewer comes out clean.

Stand for 10 minues before removing from tin. Serve as is hot or cold, or frost with coffee flavored frosting.

YES. I even caught her a few times cutting herself a slice of this cake and the cake size did seem to decrease as the day went on. Surprisingly she still went to sleep easily and had a good night sleep!
