I try to follow a mediterranean/Spanish coastal diet which means eating legumes 2-3 times per week. Possibly this is why DD loves her legumes and a legume stew is almost always finished!
This time I decided to try a white and green bean stew (original in spanish here).
Ingredients (2 people)
150 g white beans (soaked overnight)
75 g green beans
1/2 red pepper
4 cloves garlic
2 laurel leaves
1/2 cup tomato puree (tomato frito)
sweet paprika powder
Simmer soaked white beans for an hour till soft.
Sauté finely chopped onion with diced red pepper. Once soft add laurel leaves, chopped green beans and tomato puree. Simmer till cooked. Add 1/2 tsp paprika.
Change onion mixture to a large pot and add cooked white beans. Salt to taste. Boil for 5 minutes. Add diced potato and cook gently for an hour. Ten minutes before it is ready add 1/2 tsp cumin.
Serve warm with crusty bread.
