Just because it’s that time of the year… and surprisingly DD loved it. Thought the ginger would put her off, but not at all. Even had it for breakfast the next day!
- 1½ cups flour
- 1 tsp powdered ginger
- 1 tsp baking soda
- 1 tsp salt
- ¾ cup raw sugar
- 1 Tbsp honey
- ½ cup oil
- ¾ cup water
- 2 Tbsp vinegar
Preheat oven to 190 degrees C and oil cake tin.
Sift the first four ingredients together in a bowl. Dissolve the sugar and honey in the water and add vinegar. Measure the oil and add it to the dry ingredients, without stirring. Add the water and vinegar mixture to the flour-oil mixture. Stir until the mixture is smooth and no dry lumps remain.
Pour the mixture into cake tin and bake for 30 – 40 minutes, or until a skewer comes out clean.
Leave cake in the pan for five minutes, then turn out onto a wire rack and leave to cool.
