Chocolate Muffins

Craving chocolate muffins, I found myself without any egg-replacer ingredients so decided to try the apple muffin recipe without the apples and it worked great! Today I wanted to make them again, but no longer stock margarine. Surprisingly worked very well with olive oil instead.

Ingredients

260g Flour (I used glutenfree mix)

3 tsp baking powder

1/4 tsp salt

100g sugar

60g margarine (Olive oil or coconut oil work great)

2-3 tablespoons cocoa

230ml Almond milk (or any milk you prefer)

 

Instructions

Heat oven to 200 degrees celcius.

Mix dry ingredients together.

In separate bowl cream margarine and sugar.

Fold creamed mixture and milk into the flour mix. Mix well.

Spoon into prepared muffin cups.

Bake for 20-25minutes depending on size.

You bet! Especially when I make them in mini form. Although these were made for me 🙂

 

NB. I also made these, substituting 30g of flour with chickpea flour and adding a little extra milk. I find chickpea good for egg-free baking. Just don´t lick the batter!
