Muesli

Had to make some muesli to go with the yoghurt. It’s near impossible to find wheat free muesli, and what I love about home-made is that I get to make it to taste.

With rolled oat base and honey and oil coating, the rest is flexible and you can add what you like.

Ingredients

3 cups rolled oats

1/2 cup almond chips or flakes

1/4 cup sunflower seeds

1/4 cup flax seeds

1/4 cup sesame seeds

1/4 cup puffed quinoa

1/4 cup pumpkin seeds

1/2 cup honey

3 tablespoons coconut oil (or oil of choice)

1/2 cup raisins

Instructions

Heat oven to 18 degrees C. Mix all the dry ingredients together (except raisins). In a pot bring oil and honey to boil. Simmer for a few minutes. Pour over rolled oat mix. Mix well.

Spread over an oven tray (or bottom of a large oven dish). Bake for 20 minutes, mixing and turning every 4 or 5 minutes.

Allow to cool. Mix through raisins.

Store in airtight container.

Enjoy with yoghurt or milk.
