Crepes

Felt like something different for breakfast this morning. But still needed something fast and easy. So crepes it was.

Ingredients

125g flour (I used gluten free mix)

275ml vege-based milk (you may need more depending on your flour)

pinch salt

1 tsp vanilla essence

1 tablespoon olive oil

Instructions

Mix together all the ingredients till smooth. Should be runny enough to swirl around hot pan.

Heat a little olive oil in a frying pan. Pour in enough batter to cover 2/3, swirl around till thin layer covering pan. When almost dry on top, flip. Cook till slightly brown on both sides.

Serve hot or cold with topping of choice.

She liked the topping more than the crepe. But she still ate an ok breakfast.

  1. I just tried to make crepes last week (new pregnancy craving) and it was an epic fail. I don’t think it was runny enough but I followed a recipe I found on Pinterest. Anyways, thanks for this! I will try again tonight. 🙂
