Garbanzo stew

Finally found a garbanzo (chickpea) recipe that doesn´t contain spinach!

Usually I can´t eat garbanzos as it gives me tummyache. However, DD loves them. So this time I decided to soak for two days and regularly change the water – worked fantastically. Loved the stew, and no regrets after.

Ingredients

500g garbanzos (soak for two days)

1/2 large onion

3 cloves garlic

1 ripe tomato

500ml vegetable stock

olive oil

pinch ground majoram

pinch ground sweet pepper (pimienta vera)

Instructions

Finely chop the onion and garlic. Puree the tomato. Sautée the onion in the olive oil, when soft add garlic and tomato. Sautée together till some of the water has evaporated. Add the vegetable stock and bring to boil.

Save 1 large ladle of garbanzos and add the rest to the stew. Blend the garbanzos that had been set aside with a small piece of bread and a little water to make a paste. Add to the stew. Add majoram and sweet pepper. Gentle boil for a few minutes.

Serve hot.
