When buying meat at the supermarket instead of the local butcher, I have to buy large packs of chicken and it lasts us 3 meals. So I´m always looking for new ways to cook and serve it.
This recipe is simple but surprisingly good.
Ingredients:
2 chicken breasts diced
2 carrots chopped
2 celery sticks chopped
Half an onion chopped finely
water to cover
salt and pepper to taste
1/2 teaspoon ground tumeric (optional)
Instructions
Add all ingredients to a pot. Bring to boil then simmer for 40 minutes or until vegetables and chicken is tender. Salt and pepper to taste.
Serve hot with crusty bread.

Surprisingly she was ok with it. Not usually a big fan of broths.
