Italian Chocolate Cake

This is seriously the best chocolate cake I´ve eaten in a long time.

Ingredients

1 1/2 cup flour ( I do 1 cup gluten free mix and half cup fine almond flour)

3/4 cup sugar

1/2 cup dark cocoa

1 tsp baking soda

1/2 tsp salt

1/3 cup extra virgin olive oil

1 tbsp balsamic vinegar

1 1/4 cup water

Instructions

Preheat oven to 180 degrees.

Sift dry ingredients into a bowl. Mix well. Make a well in the centre and add wet ingredients. Mix well with an egg whisk.

Pour into greased 20cm round cake tin (mine is 23cm and worked fine).

Bake for 40 minutes, or till skewer comes out clean.

Stand for 10 minues before removing from tin. Serve as is hot or cold, or dust with icing sugar.

YES. I even caught her a few times standing on the table trying to cut herself a slice of this cake.
