Spanish Custard

Here´s today´s dessert! I really missed being able to eat custard. This was a good substitute.

Ingredients (3 servings)

500ml almond milk (or any vegetable based milk)

1 cinnamon stick

lemon zest (i used from 1 and a half lemons)

5 tablespoons sugar

50g cornflour/maizena

Instructions

Gently heat milk with cinnamon and lemon zest. Remove from heat when almost boiling. Strain.

Pour milk into a bain marie, add sugar and cornflour while stirring. Heat mixture while stirring continuously to avoid clumps. Heat till starts to thicken.

Pour into individual serving bowls. Sprinkle with cinnamon and cool in fridge.

Serve cold.
