Baked Lemon Trout

A new supermarket just opened up just around the corner and has a fantastic fresh fish section which I´m excited about – no more walking 15 minutes to the local fish market!

I decided to try oven baked trout, and found a simple Spanish recipe to follow.


2 trout

1 lemon

1 clove of garlic

1 fish stock cube

100ml White wine (optional, can subsitute for 100ml vege stock)


Olive Oil


Wash and gut fish (if not already done by the vendor). Place in lined oven dish. Cut garlic finely and rub into trout along with chopped parsley. Cut lemon in half. Save one half and slice the other into slices. Place lemon slices inside fish. Crush fish stock cube and sprinkle over fish. Drizzle lemon juice over fish. Drizzle some olive oil over fish.

Bake in oven at 180 degrees C for 15 minutes. Pour wine (or vege stock) over fish. Bake for a further 10 minutes.

Serve with a side of potatoes and vegetables.

Down it went. She ate half a trout!

Personally, next time I will tub in garlic and parsley and allow to stand half an hour first and also mix garlic, parsley, lemon juice and olive oil then put mixture inside fish to add flavor. I found the thick trout skin didn´t allow the garlic and lemon flavors to be absorbed.

But was still delicious served with some garlic flavored veges and lemon juice.
