I´m a big fan of vegetables in cakes. The resulting texture and taste is great and the added nutrient boost is a great bonus.
DD loves chocolate so I thought I´d give this cake a try. The original recipe can be found here.
1 cup grated zucchini (peeled)
1/2 cup olive oil
1 cup flour (I used a gluten-free mix)
2/3 cup sugar (I used a bit less)
1/2 teaspoon salt
1 teaspoon baking soda
2 heaped tablespoons cocoa
Peel and grate the zucchini (use a fine grater) and mix with olive oil. In a separate bowl mix the dry ingedients well. Slowly mix dry ingredients into zucchini mix. Mix well. The result is a very thick batter.
Spoon into a greased tin (10 x 25 cm) and bake at 180 degrees C for 30-35 minutes.
Frost to taste. I like it plain or with a little margarine.
She liked it but isn´t much into chocolate cake, prefered feeding it to her dolls and teddies. No problem – more for me!
