I love desserts. Since going dairy and egg free that has pretty much cut desserts out of my diet, especially when eating out. But now that I´m finding more time to do baking I´m able to start enjoying a few sweet things post dinner again.
This recipe is modified from the Edmonds Cookery book.
1/8 teaspoon cinnamon
1 teaspoon raw or brown sugar
3/4 cup flour (I use gluten-free mix)
1/2 teaspoon baking powder (heaped)
1/3 cup sugar
Peel and chop apple into 8 pieces. Put on pot and add water till just not covering apple. Add raw sugar and cinnamon. Bring to boil and then simmer gently for 20 minutes or until well cooked and soft.
In a bowl add flour, baking powder and margarine. Cut margarine into butter till resembles bread crumbs (I used a whisk as it cuts and mixes faster). Mix in sugar.
Place apple mixture In a 10 by 25cm dish. Spoon flour mixture over top. Bake at 180 degrees C for 25 minutes.
Serve warm or cold.
