Peanut Butter Cookies

I love cookies and always need snacks on hand. Peanut butter is also frequently in our pantry just because it´s a great and healthy snack for a toddler. It´s also a good way of getting some healthy oils and energy into DD as other fat sources are off limits.

1 cup sugar (half brown sugar works well, but I never have any and it works fine without)

1/2 cup peanut butter

1/2 cup margarine

1 teaspoon vanilla (optional)

1 1/4 cups flour (I used gluten-free mix)

1/2 teaspoon salt

1/2 teaspoon baking powder

1/2 teaspoon baking soda


Pre-heat oven to 180 degrees C. Mix together peanut butter, sugar, vanilla and margarine until well blended. Add rest of ingredients, and mix well. Form dough into balls about 1/4 inch in size, and place on ungreased cookie sheet, mark top of balls with fork. Bake for 8-10 min. Allow to cool for a minute before transfering to wire rack, cool completely.
